    • Varieties: Co-plantation of 60+ forgotten Alsatian varieties, the majority of which are not accepted by the Alsace AOC
    • Vine Age: Planted in 2008
    • Name: The cuvée is called L’Arche (Ark) as an allusion to Noah’s ark. Here, they’ve reunited the 60+ “lost” varieties of Alsace. This wine symbolizes the Deiss’ militant commitment to safeguarding the floral biodiversity that was otherwise largely abandoned in favor of industrialization, conformism, and standardized agriculture.
    • Terroir: From a small “conservatory” plot planted in Altenberg Grand Cru in Bergheim, on limestone, clay, and sandstone soils.
    • Viticulture: Organic (Ecocert), biodynamic (Demeter).
    • Vinification: The juice of the given vintage is combined with the previous vintage's wine (off-dry), ambient yeast fermentation and aging for 12+ months in stainless steel or amphora, SO2 added before bottling (if any at all), bottled with a Vinolok glass stopper.

    2020 + 2021: the 2021 whole-cluster grapes were combined with the 2020 wine for a 12-month ambient yeast fermentation and aging in amphora, no added SO2.

    2022 + 2023: the 2023 grapes were directly pressed and combined with the 2022 wine for a 12-month ambient yeast fermentation and aging in stainless steel.
