- Viticulture: High Environmental Value (HVE) and Sustainable Viticulture in Champagne (VDC) certified.
- Vinification: Composed of a blend of Pinot Meunier base wine (blanc) and Coteaux Champenois (rouge). Primary fermentation and aging for 5 months in stainless steel (base wine) and 1/3 stainless steel 2/3 used barrels (Coteaux Champenois), blocked malolactic conversion, aged for 15 months on lattes, vinification and aging without added SO2, minimal additions before bottling, 3 g/L dosage (extra brut).
