The Volnay vigneron sits down with Levi Dalton to discuss the different terroirs of his family’s domaine and the importance of history and tradition in viticulture (exclusively massal selection for new planting) and vinification (minimal intervention in the cellar to highlight terroir differences). Despite global climate change and the development of a variety of modern oenological techniques, Frédéric Lafarge is seeing a return to practices from his grandfather’s era, such as de-stemming by hand for certain cuvées.
