- Terroir: From several northeast and southeast-facing parcels on the left bank of Layon river, silt and gray-schist soils (Brioverian metagreywacke).
- Viticulture: Organic (Ecocert), biodynamic (Biodyvin). Manual de-budding, leaf thinning, and green harvesting.
- Vinification: Pressed with whole clusters, settled, spontaneous malolactic conversion (50-100%), aged around 8 months on the lees in 400 and 500 L barrels (0-40%), 20 hL puncheons (0-40%), and underground sandstone tile-lined tanks (20-100%), lightly filtered.
Additional Info
These vines grow on gentle slopes near the village of Saint Lambert du Lattay. A few of the parcels actually used to go into the domaine's Coteau du Layon Saint-Lambert cuvée.
Aged 100% in tile-lined tanks in 2023.
