- Vine Age: The oldest vines were planted in the 1930s, the youngest were planted in the 1990s.
- Terroir: From multiple parcels in Saint Lambert du Lattay, on the left bank of the Layon river, stony schist soils with sandstone. The cool misty microclimate provides ideal conditions for botrytis.
- Viticulture: Organic (Ecocert), biodynamic (Biodyvin). Manual de-budding and leaf thinning.
- Vinification: Picked in multiple passes just as the grapes begin to concentrate, pressed with whole clusters, settled, ambient yeast fermentation and aging for 12 months in stainless steel or concrete tanks, filtered with diatomaceous earth, (60-100 g/L RS).
