- Vinification: 100% de-stemmed, fermentation in open wooden tanks (punch-downs generally twice a day). Malos and aged for 8 months 60% in closed wooden tanks, 40% in older oak barrels.

Plantation density is 8,000 vine stocks per hectare. Guyot pruning and de-budding to restrict yields. Soils are plowed regularly and harvest is done by hand.
