    • Vinification: De-stemmed, 4-5-week ambient yeast fermentation in stainless steel tank, 1-2 pump-overs a day, daily punching-down of the cap by hand, aged for 18 months in used barrels, bottled and aged for an additional 18 months, SO2 additions when necessary throughout.
