    • Vinification: Vinification and aging without added SO2, gently pressed, cold settled for 24 hours, ambient yeast fermentation and aging for 12 months in used barrels and demi-muids, full malolactic fermentation, blended and aged in tank for a few additional months, minimal SO2 added before bottling.
