  • Viticulture: Organic (AB, 2022), experiments with biodynamic preparations, cover crops, horse-plowing, no trimming.
  • Vinification (whites): Pressed pneumatically, ambient yeast fermentation (with no added SO2), aged in stainless steel tank, 228-600 L barrels, and wineglobes.
  • Vinification (red): Partial to 100% whole cluster, ambient yeast fermentation (with no added SO2) in open-top tanks, maceration lasts about one month but with very little extraction, aged in wooden tanks, amphoras and used barrels for up to 15 months, no fining, no filtration.
