- Viticulture: Biodynamic (not certified), regenerative farming, Rosé, Lampia and Michet clones.
- Vinification: 100% de-stemmed, 30 ppm SO2 added before vinification, 3-week ambient yeast fermentation and maceration in oak and concrete tanks, twice-daily pump-overs for the first part of fermentation, punch-downs for the last third, aged for 18 months in 25 hL barrels, racked twice, blended and further aged in concrete tank, no fining, no filtration, bottled with gravity, SO2 adjusted before bottling.
