- Viticulture: Certified organic and biodynamic
- Vinification: De-stemmed, ambient yeast fermentation in open wooden vats with temperature control. Gentle punch-downs and pump-overs, first racking in summer. Aged for 15 to 20 months in barrel (30-70% new). No fining/filtration, gravity bottling.
