- Viticulture: Certified organic (Ecocert) and biodynamic (Biodyvin), high-density plantation with 8,500 vines/ha, non-hedged, single Guyot pruning.
- Vinification: Pressed directly, lightly decanted, ambient yeast fermentation and aging for 6+ months in 500L barrels, full malolactic fermentation (as of 2022), blended and aged for a few additional months in concrete tanks, lightly filtered, SO2 added just once before bottling.
