- Terroir: Fairly early-ripening, steep, south-facing slope at about 400-450 meters' altitude, gravelly soil with granite.
- Viticulture: Organic and biodynamic (certified), high-density plantation with 8,500 vines/ha, trellised, single Guyot pruning.
- Vinification: 30-50% whole cluster, 2-3-week ambient yeast fermentation with short pump-overs twice daily, aged for 11 months in 60hl wooden tanks, racked, blended and lightly filtered before bottling.
Additional Info
Hillside vineyard, the first planted by Stéphane Sérol himself on granitic soils. Depending on the year, this cuvée may be sourced from different parts of the vineyard in order to select the best and most consistently terroir-representative grapes in hotter or cooler years.
