- Viticulture: Purchased grapes, certified organic.
- Vinification: Ancestral method. Pressed directly, low temperature ambient yeast fermentation starts in concrete tank and continues in bottles. At 7-11% ABV the wine is filtered and re-bottled with a small dosage of SO2 (< 25 ppm total SO2 at release).
