    • Varieties: 70-75% Chenin Blanc, 15% Chardonnay, 5-10% Grenache Blanc, Grenache Gris & Carignan Blanc
    • Vine Age: Average of 25 years (as of 2021)
    • Terroir: North, south, and east-facing, stony soils over clay-silica-limestone substrate
    • Viticulture: Certified organic (Ecocert), Goblet and Cordon de Royat training.
    • Vinification: Pressed with whole clusters, cold settled for 24 hours. Ambient yeast fermentation in demi-muids and foudres. Aged for 12 months on the lees with occasional bâtonnages. Blended and aged for another 6 months in steel tanks. Lightly filtered. Minimal SO2 addition when necessary.
