Les Vignes Métissées is made from two vineyards, one old and one young. The tradition in the Roussillon was to coplant, which usually meant the inclusion of a small proportion whites varieties among the reds. These old vines, however, consist of an intricate field blend of white varities with just a few red ones. The Gallets planted the young vines with a massal selection of the old vines, to which they added a few more varieties. The pale copper color comes from the presence of red varieties, not from maceration or saignée.
