- Terroir: From the hill of San Ponzio, 100 m outside the Barolo DOCG, southwest-facing, 420 m elevation, Marne di Sant’Agata Fossil, 60% clay, 25% limestone, 15% sand.
- Viticulture: Organic (not certified), cover crops, no pesticides or chemical products, only copper and sulfur treatments, Guyot-Poussard pruning, 4,000 vines/ha, 70-80 tons/ha.
- Vinification: De-stemmed, not crushed, 2-week fermentation in steel tank started with an ambient yeast pied de cuve, pressed and returned to tank to complete malolactic conversion, racked and aged for 12 months in used barrels and barriques, bottled without fining or filtration and aged for an additional 6 months.
