- Vinification: Vinified without added SO2, directly pressed, cold settled for 24 hours, ambient yeast fermentation and aging for 12 months in used barrels, occasional lees stirring, SO2 added after malolactic fermentation and/or before bottling (60-80 ppm total at bottling), fined with bentonite, lenticular filtered.
