- Vinification: Vinified without added SO2, 100% de-stemmed, 5-day cold maceration, 1-2-week vinification in stainless steel tank with daily pump-overs and a few punch-downs throughout, pressed and settled for 1 week, aged for 12 months in barrels (approx. 30% new), SO2 added after malolactic fermentation and/or before bottling (40-60 ppm total at bottling), lenticular filtered.
