    • Vine Age: Planted in the mid 1990s
    • Terroir: Wintersheim, situated at the highest point in Rheinhessen, on the north-facing side of the hill, cooler climate, heavy clay and loess soil.
    • Viticulture: Biodynamic (Demeter, 2023), cover crops, organic matter, and sheep grazing.
    • Vinification: No added SO2 during vinification or aging, pressed with whole clusters, ambient yeast fermentation in small vessels, aged for 14 months on the lees in used barrels (50-70%) and stainless steel (30-50%), no fining, no filtration, minimal SO2 (10-30 ppm) added before bottling.
