- Terroir: Situated on the south side of the hill in Wintersheim, limestone and loess.
- Viticulture: Biodynamic (Demeter, 2023), cover crops, organic matter, and sheep grazing.
- Vinification: No added SO2 during vinification or aging, pressed for 8+ hours with whole clusters, ambient yeast fermentation and aging for 14 months on the lees in used barrels, no fining, no filtration, minimal SO2 (10-30 ppm) added before bottling.
