    • Vinification: Fermented and aged without SO2 (except in challenging vintages), 100% whole cluster, 20-25 day vinification including a 1-week carbonic maceration, pressed with a basket press, aged for 20-22 months in 228 L French barrels (25-50% new), no racking, no fining, no filtration, minimal SO2 addition (10-20 ppm) before bottling.

    "Exposition: The particularities here are in details. The small vineyards extend from the southeast side over the south to the west side. Thus the entire course of the day is connected to the sun. Also, extraordinary, all of the vineyard parcels range from the volcanically barren hilltop to the very fertile foot of the slope. Everything here seems very calm and quiet at first, but on closer inspection with a lot of depth and a very special liveliness."
